Trying to avoid desserts for someone with a sweet tooth is, well, near impossible. But I don’t like slaving away in the kitchen to concoct sugar-free baked goods all the time just so I can satisfy my little sweet cravings. Of course, I turn to fruits first thing, but when I am needing something more…decadent (a.k.a.something chocolatey), I look for easy peasy recipes I can whip up in a moment’s notice.
This one is made with Chia Seeds, because I LOVE Chia Seeds! They are such a good source of energy and can be used in so many ways! I incorporate them into our meals, especially breakfast and snacks whenever I can: add them to the french toast batter, to our oatmeal, yogurt parfaits, granola bars, as egg replacement (when I have egg-free friends over) and so much more.

I found this recipe through Wellness Mama, (whose blog I adore) but I knew I had to tweak it so I can add them dark chocolate pieces and satisfy the “decadent” part of my craving. Adding almond butter seemed to be a good solution. In hindsight, I wish I tried sunflower seed butter instead since I have to avoid high-oxalate food like almonds. But craving wins this round!
- 5-6 large Medjool Dates, pitted and soaked
- 1/2 cup Chia Seeds
- 2 Tablespoon of Coconut Oil
- 1 Tablespoon of Almond Butter (homemade + soaked preferably)
- Dark chocolate chunks
- Handful of shredded coconut
Blend dates in food processor until it turns into a paste. Mix chia, coconut oil and almond butter in a bowl. Add the chia mix into the food processor along with the dark chocolate chunks and shredded coconut. Process until everything is blended.
Press into a glass baking dish and sprinkle more shredded coconut if desired. Put in the freezer or fridge (I prefer it frozen) to harden.
