Inspired by a couple of vegan friends (and a few other things I won’t get into right now)…I’m sort of I’m trying to go 80/20 Vegan (with about 3-4 of my meals for the entire week with beef, fish and/or egg. I’m not yet willing to part with my butter, bone broth or oysters. And I don’t know if I ever will.) My husband agreed on trying 60/40 on his part. And my daughter already doesn’t eat as much meat as her parents does. At some point, I’d like to move towards eating more sustainably by going more local. I’m just not quite there yet.
For now, here’s what our almost vegan week looks like (at least on paper.)
For breakfast, I’m sticking to lots of green smoothies and green juices for myself but for little N, these Zucchini Banana Pancakes sound good. Nettle Leaf latte will be my warm beverage of choice.
I want to try this Coconut Quinoa with Spinach for lunch sometime,but I want my spinach wilted. Yum. And this Kelp Noodle Pad Thai looks amazing! As well as this Collard Wraps except I don’t really want to eat tofu so I think I’m going to use mushrooms and sprouts instead and substitute almond butter for peanut butter. And ooh, this Sweet Potato Nut Butter Soup looks so de-lish. I haven’t decided yet what kind of meat/fish kind of meal we’re going to have this week. We’ll see what happens after a few days of going without.
Champorado was one of my favorite snacks growing up in the Philippines. I want to try making this with a wild rice/quinoa mix, raw cacao and maple syrup for my once-a-week treat (I try, I try!) Oh man. This definitely takes me back to my childhood days.
